Lancaster, for instance, have a "flexible degree programme" which means you take 3 subjects in your first year (though you only apply for one) and then specialise in your 2nd/3rd/4th (depending on the length of the course) years, either a single or joint honours, but most offer single or joint honours only. Some do offer modules from other courses (like you could take History modules in an English Lit course, or sociology modules in a psychology course etc) and Manchester (one of the ones I have applied for) allow you to transfer between biosciences courses after the first year (e.g. biology to cell biology). The deadline for UCAS is 15th of January, but because of the way my college works/the references work, anytime after 1st of December is non-guaranteed to go through in time. Which university is it (if you don't have a problem sharing)? Shame about the applications but if you've decided then it's no big deal. If not I guess it's worth a shot.
