We have a demonstration orchard with about 60-80 olive trees - various sizes and cultivars. Because you use them for table olives they have to picked by hand and believe me, 20kg is a lot to pick by hand if your only work force is whiny students labourers that are completely useless.

I harvested 4 months ago. I used the Spanish method to preserve them (just salt and water). I bottled them just over a month ago, but they still have to mature in the bottle for another month or two.

I may have a ticket coming my way though. Oro Valley Police had a trap set up like always and I fell for it. It is not a speeding trap or anything like that. It's the law that if you see a cop you have to get in the furthest lane away from them. The cop was stationed right over the top of a hill so I didn't really have time to get over. Next thing I know this cop walks out in the middle of the road screaming at me (I assume to get in the other lane). I just got over and drove off (probably a stupid idea) but if they had a camera to capture my licence plate I am fucked. Two tickets= revoked licence for a year= no method of getting to work= no money= I'm fucked.

Then three minutes later cop lights went off behind me but they were going for somebody else. The cops here are just everywhere. :/

I see. Yeah, I'd assume that picking 20 Kg is long, especially considering your... "handicap" :haha:.

I guess I didn't think through what I said before, lol. For some reason I didn't think the average size of a toddler worth of olives wasn't that much if you were planning on selling or giving them away.

Speaking of which, I also tried making my sauce again, but adding olives, red pepper and wine. It was still good, but too sweet. I think it was either the wine or the pepper's fault, though.
