Idk, it seems like you're trying a bit too hard to dig into character development if you don't feel that movies don't fulfill what's necessary. Or maybe I'm just not a story junkie, as I don't spend too much time digging into the stories like others do. Basically if I liked a show overall, that's all I care about. Especially when I enjoy the largely pointless slice of life shows, where it's all about character interactions and no story.
Idk about long manga, as the longest series I kept up with was Bakuman, and that was about 170 chapters, and that manga ended the instant the main characters' goals were fulfilled. Usually I feel the longer story driven ones just keep going on for too long just for the sake of going on, and the plots do tend to get silly, especially the fighting ones.
